Home Made No Oil Vanilla Nut Granola


2 cups rolled oats

2 Tbsp shredded coconut - unsweetened 1/4 cup sunflower seeds - raw

1/4 cup almond slices

1/4 cup chopped walnuts

1/4 cup chopped pecans

1/4 cup pumpkin seeds

1 tsp vanilla

1/4 cup + 1 tablespoon real maple syrup

Optional add ins (add these in after baking about halfway - otherwise they may taste well done or burned):



Dried Blueberries


Goji Berries


Preheat oven to 320

Mix all ingredients in a bowl until moist and evenly combined

Line a cookie tray with parchment paper

Spread granola onto paper

Bake 10 minutes and stir

Bake another 10 and add in any dried fruit

Bake another 10 minutes till golden brown (or continue baking until a golden brown look is achieved)

Remove and cool


  • Top your oatmeal with this

  • Top your coconut or almond yogurt with this

  • Put in a bowl, add plant milk and eat as cereal

  • Add over banana ice-cream

  • Dip apples (or fruit of choice)into peanut butter and granola for a great snack

  • Cut up fruit and berries, top with granola
