California Dreaming Salad

Ingredients:

Mixed Greens

Kale (optional)

Avocado - diced

Red Pepper - diced

Black beans - rinsed 1/4 - 1/3 cup

Corn (you can use drained canned corn or fresh cut off the cobb) 1/4 to 1/3 cup

Hummus ( any hummus recipe is good for this)

Siracha for topping


Directions

Rinse and dry your greens and kale and arrange on a plate

Top with Beans

Add Corn

Sprinkle on diced Red Pepper

Add Avocado

place about 1/4 cup hummus on top of the salad

Drizzle the sirracha across the salad

Enjoy!


When you eat - mix the salad so the hummus siracha and ingredients all blend together… the hummus makes the most amazing “dressing” for this salad…

I could eat this salad every day… great for lunch or dinner.

Add more siracha if you like it really spicy or reduce if you are not a fan of spicy toppings
